Vanilla Mini Cakes

Vanilla Mini Cake Recipe:

Butter 5 1/2 tbsp

Sugar 1 1/4 cup sugar

Good quality vanilla 1 tsp

Plain all-purpose flour 1 1/2 cups

Full cream milk 1 1/2 cups

2 Eggs

Pinch salt

Baking powder 1 tbsp

Pre-heat your oven to 375 degrees : )

1. In a mixer with a paddle attachment cream the butter + sugar just until combined

2. Add the dry ingredients: flour + baking powder + salt

3. Alternate the wet ingredients into the mixer: milk + eggs + vanilla + milk

4. Scoop batter into cupcake pans fitted with cupcake papers about 2/3 full.

5. Bake at 375 degrees 15-20 min. (depending on the oven) Look for the cake to spring back when touched.

Vanilla Buttercream (with option to make strawberry.)

Butter 1 1/2 sticks unsalted butter

Powdered Icing Sugar 1 lb bag

Milk 2 tsp

Vanilla / Strawberry oil

1. In a mixer whip butter until all clumps are soft and fluffy

2. + powdered sugar and mix until soft

3. Add about a tsp of vanilla extract + 2 tsp milk

Strawberry option: I added strawberry oil instead of vanilla for the pink iced mini cakes and it turned out really nice : )
